I agree completely.
I recently dined at a fine-r establishment, that I will not mention, in the South End and almost (gasp) made the choice of Chard with their infamous Roasted Garlic and Herb Chicken...OK - so that may have given away the restaurant.
Our waiter almost fainted, and suggested I try something of a higher acidity level. He said he was studying to be a Somalian, and to trust him. Feeling bad, this young chap wanted to move to the Horn of Africa so badly, I almost took his advice.
But then I remembered the wise words of ...another young gay waiter I once had...
"If I want to drink Riesling with my Lamb Chops, I will drink Riesling." And I ordered the Chard I desired.
And loved it. :-)
